Ever since I started watching cooking shows when I had my first child, I have begun to enjoy looking at recipes and cooking healthy meals for my family. Especially when we were trying to figure out if specific foods triggered my daughter’s eczema, our family tried being ‘gluten free’ and on a paleo diet. While each is a little too restrictive for my enjoyment, I have taken some tips from each and have created my own go to breakfast in the morning. I actually have two depending on how much time I have in the morning.
Recipe 1) Breakfast Protein Concoction
My first recipe includes sausage (my favorite includes Aidell’s sausage or Applegate), sunny side up egg, sautéed kale, fresh cut up tomatoes with brown rice with a splash of hot sauce on the eggs and kale for added kick.
The brown rice reminds me of my childhood growing up in a Filipino household, where we ate rice with every meal. I used to use a lot of ketchup but have found that hot sauce has given me that added flavor without all the sugar. So there you have it! Easy, simple and filling without the bloated feeling. Yesterday I ate this recipe at 9:00am and then was off to work.
Forgetting my snacks at home, I actually was able to perform my work day until about 5pm without craving or feeling famished by the time I got home!
Recipe 2) Quick and Easy Green Smoothie Protein Shake
My second recipe I make if I am on a time crunch. I blend about 2 handfuls of kale, a banana and 2 scoops of organic chocolate protein powder and there you have it! Depending I will also throw in some added frozen fruit if I have some available. A tasty, filling breakfast made in a snap!
Some other added tips:
I have definitely been more mindful to shop on the ‘outside aisles’ of the grocery store, where the freshest foods are versus the more highly processed foods reside in the middle aisles.
I have gone more ORGANIC with buying fruits and vegetables.
